Pom Pom Arugula Salad
Looking for a quick, healthy and delicious lunch? One of my favorite salads to whip up is this pomegranate arugula salad. I had a similar salad at the All Good Pizza food truck in San Francisco but decided to balance out the tartness with some pomegranate. A little sweetness from the pomegranate and acid from the lime pairs perfectly with the spiciness from the arugula. The shaved parmesan on top adds a bit more substance to this light salad. It’s great as a starter for a pasta dinner date in with your boo thing or on top of a toasted wheat pita for a quick lunch. Add a bit more or a bit less of anything and everything. You really can’t go wrong with this recipe.
INGREDIENTS
1 bag arugula (9oz)
1/2 cup pomegranate seeds
2 tbsp rice wine vinegar
2 tbsps lime juice
6 tbsp extra virgin olive oil
Parmesan cheese
Fresh ground salt & pepper
Makes: 4 servings
Cook time: 10 minutes
STEPS
Mix 1/4 cup of pomegranate seeds, rice wine vinegar, lime juice and extra virgin olive oil together.
Toss mixture into a bowl of arugula and top with remaining pomegranate seeds.
Shave Parmesan cheese and grind salt/pepper to taste.
