Delicious fried rice with 5 ingredients in 5 steps. This 15 minute egg fried rice is the easiest thing you can whip up any lazy night of the week! Simple comfort food is my favorite thing to make in the kitchen and it doesn’t get simpler than this. It’s the base of most of my fried rices and I usually just add in additional ingredients (shrimp, bbq pork, etc.) after I scramble the eggs. Feel free to personalize the recipe. Maybe throw some soy sauce and spicy oil in or even some pancetta. Get crazy with it.


INGREDIENTS

1 tsp salt

2 cups jasmine rice (*overnight)

3 stalks green onion

4 eggs

5 tbsp oil

Makes: 2-3 servings
Cook time:
15 minutes

*Recipe works with fresh rice as well but the grains of rice fry better when left overnight.

STEPS

  1. Wash and chop green onions.

  2. In a wok or deep pan, add 3 tbsp of oil and heat. Once heated, add eggs and scramble in pan.

  3. Add overnight rice and 2 tbsp of oil. Press rice down with a spatula to ensure there are no clumps of rice.

  4. Sprinkle salt over rice and stir fry until rice is heated.

  5. Add in green onions and mix into the fried rice to serve.
