Always on Thyme Garlic Rack of Lamb

Looking for an impressive meat dish that can be made in under half an hour? This dish is it. Guaranteed that it will be much better than the food served at the Fyre Fest. The recipe is for 2 servings but can easily be multiplied for a group dinner or potluck. This dish is always a hit anytime I make it. The yogurt sauce is optional but I think the tanginess of the lemon and yogurt really helps to compliment the gamey taste of the lamb.

*Warning: you may need to make more than expected because it’s pretty damn tasty and people will want extras.


INGREDIENTS

1 tbsp salted butter

1 tbsp minced garlic

1 tsp whole grain dijon mustard

1 tbsp extra-virgin olive oil

2 sprigs fresh thyme (or 1 tbsp dry thyme)

1 rack of lamb, frenched

Salt & pepper

Makes: 2-3 servings
Cook time:
25 minutes

*Optional yogurt sauce.

Ingredients & Mix

  • 1/2 cup plain Greek yogurt

  • 1 tbsp extra-virgin olive oil

  • 2 tsp lemon juice

  • Pinch of salt and smoked paprika to taste

  • 1 tsp whole grain dijon mustard

STEPS

  1. Preheat oven to 450º.

  2. Rub olive oil onto rack of lamb and lightly salt & pepper both sides.

  3. Mix butter, garlic, mustard and thyme leafs together and spread on the top side of the rack of lamb. Heavily season with salt & pepper after on top side.

  4. Place on middle rack of oven and for 15 minutes then move to top rack for 5 minutes. Center of rack should read 125º. Place back onto middle rack if more time is needed.

  5. Remove from oven and let it rest for 10 minutes before slicing. Serve with yogurt sauce & fresh sprigs of thyme for garnish.
